Jack O'Lantern Stuffed Peppers

With the storm brewing, try this quick and easy Halloween dinner tonight! Perfect for the pickiest ghouls and goblins!

Witches' cauldrons are not the only thing brewing this Halloween season, it seems that mother nature is brewing something  more frightening than ghosts, goblins, or vampires...Sandy.  With the accurate nickname"Frankenstorm," we can anticipate feet of rainfall, 75mph winds, and expected statewide power outages; Mother Nature's storm is way more of a trick than a treat.  With the storm expected to hit Monday, there is still time to spread a little Halloween spirit and put the oven's electricty to use, before we begin to rely on generators and jars of peanut butter.  Stay safe 06443!

Jack O' Lantern Stuffed Peppers (Serves 4)

  • 4 medium bell peppers
  • 1 lb. of extra lean (96/4) ground beef
  • 1 cup of cooked brown rice
  • 1/2 cup of diced onion
  • 1/2 cup of diced bell pepper
  • 3 tsp. of minced garlic
  • 2 tsp of olive oil
  • 1/2 cup of jarred tomato sauce
  • 1/2 tsp. of salt
  • 1/2 cup of part skim, shredded mozzarella cheese


  • Slice the tops off the peppers and save
  • Remove the seeds and membranes from the insides of the peppers and slightly slice the bottoms to allow the peppers to sit flat
  • Cut a face in the peppers and place in a baking dish along with the cut-off tops
  • Place a skillet over medium-high heat and saute the ground beef, onion, pepper, and garlic in the olive oil until the ground beef is cooked, be sure to break the ground beef up as you cook it
  • Add the brown rice, salt and tomato sauce and combine with the meat mixture
  • Fill each pepper with the meat mixture
  • Place in a 350 degree oven for 30 minutes
  • After 30 minutes top with peppers with the mozzarella cheese and place under the broiler for 3 minutes, or until cheese is bubbling and brown
  • Top with the top of the pepper and serve
