Easy, Yet Authentic Penne alla Vodka

This is one of the easiest and tastiest Italian pasta sauces to prepare

As the nights become cooler, we all crave warm comfort food such as pasta.

But with busy work and school schedules, who has the time these days to spend hours making complicated Italian pasta dishes? I don't.

This version of Penne alla Vodka, however, is a 'fix it and forget it' sauce. It takes just minutes to get it ready for the pan and you can simmer it for as long as you want (or have time for!).

Serves 6

1 lb. of dried pasta of your choice, penne or ziti works well

5 T unsalted butter

1 onion, chopped

1 garlic clove, crushed

1/2 tsp. crushed red pepper

1/2 cup vodka

1 28 oz. can Italian plum tomatoes and their juice

1 cup heavy cream

Parmesan cheese

fresh chopped parsley, if desired

 

In a large pot of salted, boiling water, cook the pasta until al dente.

Meanwhile, in a large saute pan, melt butter over medium heat. Add the onion and cook until onion begins to soften, about 5-7 minutes. Add the garlic and stir frequently. Don't allow the garlic to burn. Add the red pepper, vodka, tomatoes (with their juices) and simmer for 10-20 minutes, breaking up the large pieces of tomato with a wooden spoon. Add the cream and cook, stirring frequently, until heated or an additional 5 minutes.

Serve on the hot pasta immediately and sprinkle with freshly grated Parmesan cheese and parsley, if desired.
