A Cool Cajun Treat for Summer

Creole Cream Cheese Ice Cream with Praline Sauce

Now that summer is finally here…it’s time for ICE CREAM!  I call this the World's Greatest Ice Cream Recipe. If you don’t have an ice cream maker, borrow one…this is worth it! 

Ingredients:

  • 8 ounces cream cheese, softened
  • 1 cup milk
  • 1 tablespoon fresh lemon juice
  • ¾ cup sugar
  • 1/8 teaspoon salt
  • ½ cup heavy cream

Blend the cream cheese, milk, lemon juice, sugar and salt in a blender until smooth.

Transfer to a bowl and stir in the heavy cream.

Freeze the mixture in an ice cream maker per manufacturer’s instructions.

Transfer to an airtight container and put in freezer to harden, at least 2 hours.

Let ice cream soften about 5 minutes before serving.

Makes 1 quart.

Praline sauce:

  • 2 cups light corn syrup
  • 2 cups dark corn syrup
  • 2 cups pecan halves or pieces, toasted
  • ½ cup cane syrup (optional)
  • ½ cup water
  • 1 teaspoon vanilla

Combine dark and light corn syrups, pecans, cane syrup, sugar and water in a saucepan.

Heat to dissolve sugar, whisking occasionally.

Remove from heat and cool

Add vanilla.

Makes about 7 cups.
