Montville Man Brings Burgers and Dogs to Mobile Food Park

Montville's Randy Carroll is joining the ranks of Rolling Tomato at the mobile food park in Yantic.


When Randy Carroll, a Montville resident of 20 years now, isn't fighting the flames as captain of the Poquonnock Bridge Fire Department, he's hoping to light your taste buds on fire. 

Carroll and his mobile food kitchen Rollinred's, are the newest tenants in the mobile food court at 276 West Town Street in Yantic. He shares a lot with friend and third-generation Montvillian Robert Currier, owner of everyone's favorite traveling pizza truck The Rolling Tomato.

Carroll's truck will offer customers hot dogs and burgers and complement the array of food offered at the mobile food court that has Italian Express, a Uncle D's BBQ, The Rolling Tomato and coming soon, East Coast Taco.

"I just want to do the basics and I chose something that would fit in with what's here," said Carroll. "Everyone loves a good burger, now there's going to be choices."  

But, don't be fooled. Carroll says he'll offer regular hot dogs and hamburgers but there will be guest appearances by some very important players . Carroll has a few parmesan sandwiches on his menu, and some "Out of Towners" like a Chicago Dog and a Philly Cheese Dog.

"I plan on bringing in things that are not 'normal' to this area," he said.
Which is good. Customers can also look forward to not having to drive to Westerly for a Soupy burger, which has Italian sausage mixed in. Nor will they have to drive to Providence for a New York System hot wiener, which when ordered "all the way" is topped with a meat sauce, spices, onions, celery salt and yellow mustard.

It's no surprise to Carroll's co-workers or his wife Lisa that he'll take up a second job as cook. Carroll gained a lot of experience cooking for crowds at the fire house for 27 years.

And that's where the name came from, he said. Early in his career Carroll said he was named Rollin' Red and it stuck. 

"I like to cook, I picked up most of it at the fire house," he said. "So now I want to get out there and do more of it."

Carroll expects to open up for business on May 17 and will keep a schedule that accommodates his full time job so be sure to keep up with Rollinred's on Facebook and Twitter.
