Stuffed Shells Make an Easy and Delicious Dinner

Add Extra Spices to the Sauce to Give It a Little Zest

Need something quick and good for dinner tonight? Here is something:

Ingredients

  • 1 box jumbo shells
  • 32 oz. container ricotta cheese
  • ½ cup parmesan cheese
  • 2 cups shredded mozzarella
  • 1 cup diced onions (sautéed)
  • 2 cups chopped spinach (cooked)
  • 1 tbs chopped thyme
  • 1 tbs chopped oregano
  • 1 32 oz can of pasta sauce (add basil, oregano or garlic to the sauce if you like!)

Shells

In a large stock pot of boiling water add the box of jumbo shells. Boil for about 10 minutes or until tender. Do not overcook. Strain and cool.

Filling

In a large mixing bowl add the ricotta cheese, 1 cup of mozzarella cheese, parmesan cheese, chopped herbs, spinach and sautéed onions; mix it all with a spoon. With a small spoon or with your hands, fill each shell with a generous amount of filling until shells are all gone or the filling is all gone. (Whichever comes first.)

Cooking

In a 9x9 inch pan; evenly coat the bottom of the pan with ¾ of the can of pasta sauce. Place the shells in the pan with the open side of the shell up. Once the pan is full, using the rest of your pasta sauce, cover your shells. Top with the 1 cup of mozzarella cheese left, and put in the oven uncovered for 15-20 minutes.
