Pralines

There are shops in New Orleans that serve nothing but! Here's an easy and delicious recipe.

Pralines (Praw-leens..not Pray-leens) are the most popular of all the Creole confections.

Ingredients: 

1 ½ cups sugar

¾ cup light brown sugar, packed

½ cup milk

6 tablespoons butter

1 ½ cups pecans, roasting optional

1 teaspoon vanilla 

Combine all the ingredients and bring to a “softball state” *(238-240 degrees, stirring constantly. 

Stir until the mixture thickens, becomes creamy and cloudy and the pecans stay suspended in the mixture.

Spoon out the mixture on buttered wax paper, aluminum foil or parchment paper.  (When using wax paper, be sure to buffer with newspaper underneath because the hot was will transfer to whatever is beneath). 

*When you place a spoonful into a glass of water and it sticks to the side.

Yield: 20, depending on size.
